Superfood Protein Salad

This superfood salad is packed full of nutrients and will be sure to boost your health. Besides the natural fiber, vitamins and minerals found in lettuce and leafy greens, these ingredients, all found in our superfood protein salad, will prove to be heavy hitters in healthiness. Remember that organic produce is always best, and you can omit the chicken to make this salad vegan friendly.

Goji Berries – This little berry, often found at your local supermarket dried due to its short shelf life, comes from South America and known for being a low-calorie, fat-free superfood packed full of antioxidants. Goji Berries are a good source of vitamins A, C and B2, and they have a higher absorbency score than blueberries! They even have 4 grams of fiber in a ¼ cup serving. Antioxidants fight damage from free-radicals and vitamins A and C positively impact your body’s immune function.
Hemp Seeds- Actually categorized as a nut, these tiny seeds are comprised of over 30 % fat and 25% high- quality plant based protein (more than chia seeds and flaxseed). Hemp seeds have an excellent 3:1 ratio of omega 3 and omega 6 fatty acids, which are important for brain development, and contain gamma-linolenic acid (GLA), which produces prostaglandin E1, which is good for balancing hormones and PMS. Hemp seeds are also a great source of vitamin E and minerals such as phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc.
Avocado – This delicious, fatty fruit has become one of the most popular health foods of this decade, but for good reason. It not only tastes amazing with a variety of foods, it also has vitamin K (26% of your RDA), vitamin C, B5, B6 and E, folate and potassium.
Cucumbers – This hydrating vegetable contains 96% water, and contains about 4% of your RDA of potassium and vitamin C. With its high water content, cucumbers are great for hydration, given our bodies are 60% water, and our brains and hearts are 73% water!
Raw Garlic – One of the healthiest superfoods, second only to turmeric, prevents heart disease, cancer, decreases high blood pressure, boosts immune system, naturally anti-parasitic and helps improve symptoms of dementia. Skip the roasting and try raw garlic.
Lemon – This citrus fruit boosts immune system with its high levels of vitamin C, it improves iron absorption, it helps prevent asthma by decreasing bronchial hypersensitivity, helps formation of collagen (good for skin and complexion). Vitamin C prevents formation of free-radicals that are known to cause cancer.
Sea Salt – Mineral rich sea salt is an excellent source of trace minerals and electrolytes which are critical for hydration, muscle and neurological function, and blood pressure regulation, just to name a few benefits.
Olive oil – One of the healthiest fats you can us, olive oil is high in monounsaturated fat (mostly oleic acid), and has 75% of your RDA of vitamin E and K.


Superfood Protein Salad
Serves 1

Ingredients: (Always Use Organic!)
½ cup Spring Mix
½ cup Arugula
¼ Avocado, sliced
¼ cup Cucumber, sliced
½ cup Grilled Chicken Breast
1/8 cup Fennel, sliced
1 Tbsp Goji Berries
½ Tbsp Hemp Seeds

(Makes serving for 4. Refrigerate extra in air tight container.)
2 Tbsp Olive Oil
Fresh Squeezed Lemon Juice, from ½ of a Lemon
1 Raw Garlic Clove
½ tsp Sea Salt
Pinch of Black Pepper

Place all dressing ingredients in a food processor or blender and pulse until blended (about 3 seconds). In a large bowl, add spring mix and arugula, then drizzle 1 Tbsp dressing on top. Top salad with avocado, cucumber, goji berries, fennel, Hemp seeds and chicken. Enjoy!
